Gwyneth Paltrow’s Diet Change: Eating Carbs and Cheese After Paleo (2025)

Gwyneth Paltrow is eating pasta again.

In an episode of “The Goop Podcast” released Tuesday, April 22, the Goop founder, 52, shared that she was loosening up on the strict Paleo diet she has maintained for years.

“I’m a little sick of it, if I’m honest,” Paltrow said. “I’m getting back into eating some sourdough bread and some cheese. There, I said it. A little pasta. After being strict with it for so long.” She explained that the reason she and husband Brad Falchuk “became Paleo a few years ago” was for “longer-term inflammation and health stuff.”

Paltrow added, “I have to be really careful not to have inflammation in my brain,” because she has an increased risk for developing Alzheimer’s disease.

Per the Mayo Clinic, the Paleo diet consists of foods similar to what humans might have eaten during the Paleolithic Era, which cuts out processed foods, dairy products, sugars, grains and legumes, but includes a wide variety of fruits, vegetables, nuts, lean meats and fish.

“It’s a good, sort of, template, right?” Paltrow said of her diet. “Eating foods that are kind of as whole and fresh as possible.”

In January 2020, Paltrow revealed to Harper’s Bazaar everything she eats in a day, starting with water and coffee before heading straight to the gym. “I always have a big thing of water at the gym, and I put two of our Goop Glows in there for Vitamin C and for skin,” she said at the time, adding, “I try to have a smoothie that has some good fat and some protein and some fiber.”

Paltrow also noted that, at the time, her cheat meals would include fries and pasta.

Along with a strict diet, Paltrow has also tried intermittent fasting, which she began as a result of her struggles with “long COVID.”

Paltrow explained via her Instagram Story that her diet was in part due to her struggles with “long COVID.”

“The way it manifests for me is very high levels of inflammation over time,” she said via social media in March 2023. “I’ve been working with Dr. [Will] Cole to really focus on foods that aren’t inflammatory … lots of vegetables, cooked vegetables, all kinds of protein, healthy carbs … and it’s been working really well.”

She emphasized that her routine was developed based on personal “medical results and extensive testing” and was not intended “to be advice for anyone else.”

“It’s really just what’s worked for me and it’s been very powerful and very positive,” the Oscar winner said. “This is not to say that, you know, I eat this way all day, every day. And by the way, I eat far more than bone broth and vegetables. I eat full meals. I also have days where I eat whatever I want, French fries or whatever. But my baseline really has been to try to eat healthy.”
